Organic Coconut Carrot Cake

Ingredients (all organic if possible):

8oz organic grated carrots

8 oz organic soft brown sugar
OR just under 8 oz of Sucanat™ and a tablespoon of Maple Syrup

6 oz Coconut Oil
4 oz organic whole wheat baking flour
2 oz organic chopped walnuts
2 organic free range eggs
Grated peel of 1 organic orange
1 teaspoon baking soda
1 teaspoon ground cinnamon

 

Warm the Coconut Oil till it is liquid, then beat eggs and Coconut Oil together. Mix in the remaining ingredients together and place in a loaf pan greased with a mixture of virgin coconut oil and liquid lecithin (6 to 1 is a good ratio).

Bake in preheated oven at 350 degrees for 45 – 60 minutes. (Check with a fork - the cake is ready when the fork comes out clean.)
