Pomegranate Dijon Salad
Before Beginning: Of course this recipe will have
pomegranate juice in it, and you have your choice of bottled juice
or pomegranate juice powder. If you choose the bottled juice, you
will have to cook down a cup and a half of that juice into a
quarter cup which can take anywhere from 30 to 40 minutes. If you
use pomegranate powder, you can mix it up in less than a minute.
Also this is the first recipe in which we
recommend MCT (medium chain triglycerides) oil. If you are dieting
or just need extra energy, this oil burns up quickly and keeps you

Ingredients (all organic if possible)
Pomegranate Juice (see below)
Better Stevia (optional)
1 Tablespoon Apple Cider Vinegar
1 teaspoon Dijon Mustard
¼ teaspoon White Pepper
Celtic Sea Salt
To make the thick pomegranate juice, take a cup and a half
of bottled pomegranate juice and slowly cook it down to a quarter cup. Or, you
can take ¾ cup of powdered
pomegranate juice and add that to your shaker with a quarter cup of water.
Add everything else and shake for about a minute. You will make enough dressing
for 4 to 5 average sized salads.
I call the Stevia "optional" because I tried them both. And personally, they
were both good.
Kids love this one, by the way. This is a good way to introduce your kids to raw
veggies. Cut them up small and mix them in well. A bit of red cabbage, bit of
onion, some grated carrots or grated beats, small pieces of broccoli.
Cover them with this dressing and they will love it.
Health Notes: Besides the
MCT oils being good for instant
energy (and weight loss), they also make you a bit more sensitive to
insulin/leptin and boost your immune system. The pomegranate juice and apple
cider vinegar are great for the heart; pomegranate juice will help remove
"sludge" from your arteries.
