Thousand Island Dressing
Low Carb

Author's Note: This is not your run-of-the-mill dressing. This one has a kick to it and for you purists, you'll need three ingredients from this site: Mayo, Ketchup, and Pickles. The pickles you choose to use are up to you, however, I prefer my Taste of India pickles. All your 1000 Island dressings call for sweet pickle relish. This is the only recipe you'll find in which dill pickles are used, but with a "flare."

Ingredients (as always, as organic as possible)

1 cup Mayo
cup
Ketchup
2 Tablespoons Pickles (chopped into relish)
2 Tablespoons Erythritol (powdered in a blender)
2 Tablespoons Pickle Juice (from your pickles!)
teaspoon Horseradish
teaspoon Celtic Sea Salt
1 clove Garlic (crushed)
1 Tablespoon Onion (crushed; you can use your garlic press)
Dash of black pepper

Instructions:

Whisk the ketchup and mayo together with a dash of black pepper. Then in a separate container, put the rest of the ingredients and blend them up as best you can. Once the salt and Erythritol are dissolved and everything is mixed perfectly together, fold into the Mayo/Ketchup, whisk a bit and serve.
